A Storchtoberfest Follow Up

I wanted to post a brief follow up to my Storchtoberfest post. The beer came out really good! It was received well by everybody who was able to try it. The positive feedback was very encouraging.

My next steps will be to modify the recipe slightly to see what kind of changes result in the final product. I think I will add 12 oz to a pound of the caramunich malt. I hope that this will add a bit more to the mouth feel of the beer. While the beer was very good, it didn’t have the same mouth feel that a traditional märzen has. I feel like there is more residual sugar left in a märzen that leaves it feeling “thicker”. My hope is that if I add to the amount of caramunich malt that I used, I could achieve something closer.

I realize that it could be any number of factors that caused this, after all, my beer was an ale brewed with a kölsch yeast. It might not be possible for me to come up with something closer to a märzen, but it can’t hurt to try.
